This Beef melts in your mouth Comfort Food!
Sear the beef in a pot with olive oil over medium-high heat until browned on all sides (about 10 min). Remove and set aside.
In the same pot, sauté onions, carrots, potatoes, and mushrooms for 2-3 minutes.
Stir in tomato paste and sugar, then pour in beef broth.
Add thyme, rosemary, and bay leaves.
Cover and cook in oven or stovetop at 350F (175C) for 2.5 to 3.5 hours.
until the meat is melt-in your-mouth tender.
Garnish with fresh parsley or cilantro before serving.
