Preheat the oven to 205°C (400°F) and line a baking sheet with parchment paper.

Prepare the filling: Roughly chop the sun-dried tomatoes.

Heat a small saucepan over medium heat. Add the sun-dried tomatoes and cook until they start to sizzle. Add the minced garlic and spinach, cooking until the spinach is wilted (about 1-2 minutes).
Remove the pan from the heat, then stir in the cream cheese and a pinch of sea salt. Set the filling aside.

Place the salmon fillets on a cutting board and carefully slice each fillet in half horizontally to create a pocket for stuffing.

Brush the salmon fillets with olive oil and sprinkle with sea salt and black pepper.

Transfer the salmon to the parchment-lined baking sheet.
