My Green Goddess Pasta recipe is extremely easy to make as it mostly entails a simple homemade sauce and whatever pasta you like!
Boil pasta. In a large pot of salted water, cook the spaghetti until al dente.
Remember to reserve a cup of pasta cooking water before draining.
Cook the greens. In another pot, blanch the broccoli until slightly tender. Add frozen peas for a pop of sweetness, and finish with fresh spinach until wilted.
Drain and set aside. (To keep those spinach, broccoli, peas, or leafy greens really green, submerge them in an ice water bath the moment you pull them out of the boiling water. This will keep them vibrantly green with a pleasing snap)
Blend. In a blender, combine the boiled broccoli, peas, and spinach with fresh basil, lemon zest, lemon juice, cream cheese, and garlic. Blend until smooth, adding pasta water as needed for creaminess.
Combine. Combine the green sauce with drained pasta and parmesan in the same pot. Toss until well-coated. Adjust the consistency with pasta water if needed. Season with salt and pepper to taste.
Garnish and enjoy. Serve your Green Goddess Pasta hot, garnished with extra parmesan and a sprinkle of lemon zest. Enjoy!
