A quick and tasty summer appetizer with roasted cherry tomatoes, garlic, and creamy burrata on toast.
Preheat oven to 180°C (350°F).
Place tomatoes in a baking dish, add garlic (top cut off) in the center, and scatter thyme.
Drizzle with olive oil, sprinkle with salt and pepper, and roast for 15-20 minutes until soft.
Squeeze garlic out, mix with tomatoes.
Place burrata in the center, then serve on toasted bread.
