Perfectly cooked filet mignons wrapped in flaky puff pastry is not only delicious but also such a gorgeous presentation.
Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare the Filets:
Season the filet mignon with salt and black pepper on all sides.
Sear the Filets:
In a skillet, heat the olive oil over medium-high heat.
Sear the filet mignon for about 2-3 minutes on each side until it is browned but still rare in the center.
Remove the filet from the skillet and let it cool slightly.
Brush with Mustard:
Once the filet is cooled, brush it with Dijon mustard, ensuring an even coat.
Prepare Mushroom Duxelles:
In the same skillet, melt the unsalted butter over medium heat.
Add the minced shallots and garlic, and sauté until softened, about 2-3 minutes.
Add the finely chopped button mushrooms and cook until the moisture has evaporated, stirring occasionally.
Season with salt, white pepper, and pour in the dry white wine.
Continue to cook until the liquid has evaporated.
Remove from heat and let cool.
Assemble the Wellington:
Lay out the 3 slices of prosciutto on a clean work surface, slightly overlapping them.
Spread a portion of the mushroom duxelles over the prosciutto, ensuring it covers the area where the filet will sit.
Place the filet on top of the mushroom mixture.
Carefully wrap the prosciutto around the filet, ensuring it is fully enclosed.
Wrap in Puff Pastry:
Roll out the frozen puff pastry on a lightly floured surface. Cut it into a rectangle large enough to envelop the filet.
Place the wrapped filet in the center of the pastry rectangle.
Fold the pastry over the filet, sealing the edges well to prevent any leaks. Trim any excess pastry if necessary.
Place the wrapped filet seam-side down on a baking sheet lined with parchment paper.
Egg Wash:
Brush the top of the Wellington with the beaten egg wash (egg mixed with water), ensuring even coverage for a nice golden finish.
Bake:
Place the baking sheet in the preheated oven and bake for 18-20 minutes or until the pastry is golden brown and puffed.
Serve:
Once baked, remove from the oven and let rest for a few minutes before slicing. Serve with your choice of sides and enjoy!
