Golden, crispy outside and fluffy-tender inside — these baby potatoes are pure comfort food heaven.

Wash the potatoes and place in a dry pan. Add water to almost cover, cover with lid, and simmer for 20 minutes.
Drain any leftover water, add butter and olive oil.
Cover and cook on low heat for 15 minutes.
Remove lid, turn up the heat and crisp them up until golden.
Turn off the heat, season with salt, add garlic and fresh dill. Toss well.
