Add the butter (30 g / 2 tbsp) and olive oil (5 ml / 1 tsp), letting the butter melt and foam gently.

Add the baby spinach (50 g / 1 cup) to the skillet.
Sauté for about 30 seconds, stirring occasionally, until slightly wilted.

Pour the whisked eggs into the skillet, spreading them evenly. Sprinkle the grated mozzarella (50 g / ½ cup) evenly over the eggs.

After 2-3 minutes, when the eggs are starting to set but still slightly runny on top, arrange the tomato slices over the eggs.
