In a bowl, whisk the 4 eggs until smooth and season with a pinch of salt and pepper. Slice the large tomato into thin rounds or wedges, depending on preference. Grate the mozzarella cheese.

Add the butter (30 g / 2 tbsp) and olive oil (5 ml / 1 tsp), letting the butter melt and foam gently.
Cook the Spinach:
Add the baby spinach (50 g / 1 cup) to the skillet.
