Lasagna Rolls (Rotolo) A cozy Italian classic with a twist - rolled lasagna noodles stuffed with cheesy spinach filling, baked in a rich tomato sauce. Simple, delicious, and customizable!
Sauce:
Heat 2 tosp olive oil in a saucepan, sauté onion 5 min, add garlic 1 min. Stir in tomatoes, oregano, salt, and pepper. Simmer 15 min, add basil, set aside.
Preheat oven to 190°C (375°F). Boil lasagna noodles with 1 tbsp olive oil for 1 min less than package says. Drain, rinse with cold water, lay on parchment.
Mix ricotta, spinach, 100 g (1 cup) mozzarella, parmesan, egg, salt, and pepper.
Spread 1 cup sauce in an 18x18 cm (7x7 inch) baking dish.
Spread filling on noodles, roll up, place in dish.
Top with 1 tbsp sauce per roll and extra mozzarella.
Bake 20 min until bubbly and melty.
