Preheat oven or air fryer to 160°C (320°F).
Poke the potato all over with a fork, rub with olive oil, salt, and pepper. Bake for 30 minutes.
Increase temperature to 180°C (360°F) and bake for another 15 minutes until the skin is crispy.
Cut a cross on top of the potato, scoop the inside slightly, season with salt, and mix in butter.
Fill with mozzarella, top with cherry tomatoes, and return to the air fryer for 5 minutes until the cheese melts.
