Georgian Tomato and Cucumber Salad Recipe
Peel the cucumbers and chop them into bite-sized pieces (about ½-inch or 1 cm chunks).
Dice the tomatoes into similar bite-sized pieces.
Thinly slice the red onion into half-moons.
Finely chop the walnuts using a knife, or pulse them in a food processor or blender until finely ground but not pasty.
In a large bowl, combine the cucumbers, tomatoes, red onion, and walnuts.
Add the chopped parsley, cilantro, and basil.
Drizzle with wine vinegar and olive oil, then season with salt to taste.
Gently toss everything together until well mixed.
