This mouthwatering dish uses one chicken breast fillet, thinly sliced, and stuffed with a creamy veggie filling, baked to perfection, and topped with tomato sauce and melted mozzarella. Perfect for two people!
1Preheat oven to 350°F (180°C).
Sauté grated carrot, shallot, and garlic in 1 tbsp olive oil until soft (5-7 min). Cool slightly.
Mix sautéed veggies with cream cheese, shredded mozzarella, 1 egg, salt, and pepper.
Lay chicken slices flat, spoon filling onto each, and roll tightly.
Place rolls in a baking dish and drizzle with 1 tbsp olive oil.
Bake for 20 min until cooked through.
Remove from oven, spoon tomato sauce over rolls, and top with mozzarella slices. Bake 5 more min until cheese melts.
