A cozy, cheesy delight with tender zucchini, creamy ricotta, and savory tomato sauce!
Perfect for a family dinner or a
comforting meal.
Slice zucchini into medium rounds-thin but not
translucent.
In a bowl, mix ricotta, finely chopped baby spinach, dried
basil, a pinch of salt, and pepper until smooth.
Preheat oven to 350°F / 180°C.
Spread 3 tosp of tomato sauce evenly in a baking dish.
Layer zucchini slices, season with salt and pepper, and
drizzle with olive oil.
Spread a layer of ricotta mixture, then sprinkle with shredded mozzarella.
Repeat layers: zucchini, salt, pepper, olive oil, ricotta.
Top with remaining tomato sauce, mozzarella, and Parmesan. Finish with a few zucchini slices and a drizzle of olive oil.
Cover with foil and bake at 350°F / 180°C for 20 minutes.
Remove foil, increase to 425°F | 220°C, and bake 10-15 minutes until golden.
