Preheat your oven to 200°C (400°F).
Heat 2 tbsp olive oil in a large, deep skillet over medium-high heat. Add mushrooms, onion, and a pinch of salt. Sauté, stirring occasionally, until the mushrooms release their liquid and it mostly evaporates, about 10 minutes.
Stir in garlic, black pepper, and thyme. Cook for 1 more minute, then remove from heat.
(Optional) Add 30 ml (2 tbsp) cognac and stir.
Transfer the mixture to a baking dish. Sprinkle evenly with shredded mozzarella.
Bake for 15 minutes, or until the cheese is hot and bubbly.
Garnish with fresh parsley and serve immediately.
