This vibrant and flavorful dish combines tender, golden chicken drumsticks with colorful roasted vegetables, all infused with a zesty marinade. The secret? Using baking paper in the skillet to keep everything juicy and mess-free, transitioning from stovetop to oven for a perfect finish. Let’s get cooking!
Prepare the Marinade In a large bowl, mix the paprika, salt, dried parsley, red pepper flakes, ginger, turmeric, and olive or sunflower oil to form a thick marinade. Toss the chicken drumsticks in the marinade, ensuring they’re well-coated. Set aside a portion of the marinade for the vegetables. Cover the chicken and let it marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).
Prep the Vegetables In another bowl, toss the potato wedges, bell pepper strips, and onion chunks with the reserved marinade. Ensure all vegetables are evenly coated. Set aside.
Sear the Chicken Heat a large oven-safe skillet over medium-high heat. Add a drizzle of oil if needed. Remove the chicken drumsticks from the marinade (reserve any leftover marinade) and sear them in the skillet for 2-3 minutes per side until they develop a golden-brown crust. Remove the drumsticks and set them aside.
Assemble in the Skillet Line the bottom of the same skillet with a sheet of baking paper. Arrange the marinated vegetables in an even layer on the baking paper. Place the seared chicken drumsticks on top of the vegetables. Drizzle any remaining marinade over the chicken and veggies. Cover the skillet with another sheet of baking paper, tucking the edges in to create a loose seal.
Bake Preheat your oven to 180°C (350°F). Transfer the skillet to the oven and bake for 45 minutes, or until the chicken is cooked through (internal temperature of 75°C/165°F) and the potatoes are tender. Remove the top layer of baking paper for the last 5-10 minutes if you want the chicken to crisp up further
Serve Carefully remove the skillet from the oven. Discard the top baking paper and transfer the chicken and vegetables to a serving platter. Garnish with fresh herbs if desired. Serve hot with a side of your choice, like a fresh salad or crusty bread to soak up the flavorful juices.
