The rich, garlicky cream sauce with spinach and sun-dried tomatoes takes tender salmon to the next level.
Cook pasta according to package instructions.
Drain and set aside.
Heat butter and olive oil in a skillet over medium heat. Sear salmon cubes for 2-3 minutes per side until cooked through. Remove and set aside.
In the same skillet, sauté garlic until fragrant.
Add sun-dried tomatoes, heavy cream and spinach.
Simmer until slightly thickened.
Add the pasta, return the salmon to the pan and stir. Sprinkle with Parmesan and serve immediately.
