These Caprese Zucchini Boats are a summer must-have! The combo of creamy mozzarella, fragrant basil, sweet balsamic glaze, and fresh zucchini with tomatoes is pure perfection. Easy, healthy, and bursting with flavor!
Preheat a grill pan over medium heat.
Slice zucchini in half lengthwise. Brush the cut sides with olive oil and season with salt and pepper.
Place zucchini cut-side down on the grill pan. Cook for 8-10 minutes until charred and slightly softened.
Flip zucchini over and layer with mozzarella slices and tomato slices. Sprinkle with a pinch of salt and pepper.
Transfer to a preheated oven at 425°F (220°C) and bake for 10-15 minutes, until the cheese is melty and bubbly.
Remove from oven, sprinkle with fresh basil, and drizzle with balsamic glaze. Serve warm and enjoy!
