Salmon:

Dice salmon into small cubes (0.5 cm).
Mix with soy sauce, 1 tsp lime juice, and olive oil.
Chill for 10-15 min.

Avocado Puree:

Mash avocado with 1 tosp lime juice, salt, and pepper until creamy.

Prep:

Finely chop onion and herbs. Soak onion in cold water for 5 min to reduce sharpness (optional).

Assemble:

Using a ring mold, layer avocado puree, then salmon mix, pressing gently. Remove mold.

Serve:

Garnish with herbs and sesame seeds.
Serve with toasts or crackers.

Chef's Note

Use sushi-grade salmon. Prepare just before serving for freshness.
