Preheat your oven:

Set it to 220°C / 425°F.

Prep the potatoes:

Wash and dry the potatoes thoroughly. Rub them with olive oil and sprinkle with salt. Place a few fresh thyme sprigs on top of each potato for flavor infusion.

Bake:

Wrap the potatoes in foil and place them on a baking sheet. Bake for 50-60 minutes, or until tender when tested with a knife. Timing depends on the size of your potatoes!

Remove thyme:

Once baked, carefully remove the thyme sprigs (they've done their job infusing the potatoes with flavor).

Add the goodies:

Cut the potatoes open, fluff the insides with a fork, and add 1 tbsp butter to each. Sprinkle with grated mozzarella and bacon bits if using.

Melt the cheese:

Pop the potatoes back in the oven for 3-5 minutes until the cheese is melty and gooey.

Serve:

Garnish with fresh dill or more thyme if desired. Dig in and enjoy!

Chef's Note

• Want a different texture? Bake without foil for a slightly firmer skin.

• Swap mozzarella for cheddar or your favorite cheese!

• No need to poke holes in the potatoes—they'll still bake perfectly, just check for doneness.
