Smoked mussels offer a delicious twist when fresh mussels aren’t an option. This quick and flavorful dish uses tinned or jarred smoked mussels for a rich, savory pasta perfect for any night.
Bring a large pot of water to a rolling boil. Add 2 tbsp (30 g) kosher salt, stir, and return to a boil. Add pappardelle and cook until al dente, following packageinstructions.
Meanwhile, heat olive oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes.
Add garlic and red pepper flakes, stirring until fragrant, about 1 minute.
Stir in parsley and white wine. Simmer for about 15 minutes until the wine reduces slightly.
Add smoked mussels and cook for 1-2 minutes to warm through.
Reduce heat to the lowest setting. Drain the al dente pasta and add it to the skillet, tossing to coat in the sauce. Cook for 2-3 minutes to meld flavors.
Serve immediately, garnished with extra parsley if desired.
