Prepare the Filling:

In a bowl, mix cream cheese with chopped spinach, green onions, parsley, red chili pepper, sun-dried tomatoes, dried garlic, salt, and pepper until well combined.

Assemble the Burgers:

Spread the cream cheese mixture evenly inside 2 Portobello caps (with stems removed). Layer with red onion rings and tomato slices. Sprinkle shredded cheese on top. Cover each with another Portobello cap (stem side down). Brush the tops with olive oil and sprinkle with sesame seeds.

Bake:

Preheat oven to 180°C (350°F). Place the assembled burgers on a baking tray and bake for 15-18 minutes until the mushrooms are tender and the cheese is melted.
