Mushroom lovers, this one's for you! This quick and easy recipe (ready in 15-20 minutes!) will become a favorite.

Preheat the oven to 350°F (180°C).
Slice mushrooms and onion into half-moons. Place in a baking dish.
Add thyme sprigs, salt, pepper, and olive oil. Toss to combine.
Spoon cream cheese over top and bake for 15 minutes.
Meanwhile, cook fettuccine in salted boiling water until al dente.
Remove the mushroom mixture from the oven and stir with the cream cheese until smooth.
Mix in truffle paste (2 tbsp - my obsession!), finely chopped parsley, and the cooked fettuccine.
For a saucier texture, add a splash of pasta cooking water (it's liquid gold!).
Toss everything together and serve immediately!
