Prep the filling: Heat 2 tbsp olive oil in a skillet over medium heat. Add sliced mushrooms and sauté until golden, about 5-7 minutes. Stir in baby spinach and cook for 30 seconds until slightly wilted. Add minced garlic, a pinch of salt, and pepper, and cook for another minute.
Set aside.
Stuff the chicken: Carefully open the chicken breasts to create a pocket (or slice as preferred for stuffing).
Spoon the mushroom-spinach mixture into each pocket.
Season the chicken with salt and pepper on both sides.
Bake: Preheat your oven to 200°C (400°F). Place the stuffed chicken breasts in an oven-safe dish. Bake for 25 minutes.
Add mozzarella: Remove the chicken from the oven, top each breast with 3 slices of mozzarella, and return to the oven for 10 more minutes, until the cheese is melted and bubbly.
